Stuffed Capsicums
INGREDIENTS
500g organic beef mince
1 diced onion
2 diced carrots
2 cloves garlic
3 tbsp @herbiesspices greek seasoning
1 tin chopped tomatoes
1 tbsp @aliceinframes delightful @tumami.army everything spread
1 punnet cherry tomatoes
200g fetta
METHOD
1. Simply sauté your onion & carrots in olive oil then add the garlic. Once they have softened and have some colour, add in a few tablespoons of the greek seasoning and your tumami paste. At this point, make it your own and add in some extra herbs and spices, maybe some oregano or chilli powder.
2. Add in the can of chopped tomatoes and simmer away for a little longer.
3. Once you're certain it's perfect, take off the heat and prepare the capsicum. Chop the tops off and remove the seeds.
4. Fill the capsicum with your delicious beef concoction and lay flat in a baking dish.
5. Throw the tomatoes over the top, crumble the fetta, season, and drizzle some more olive oil for good measure.
6. Bake in the oven for around 20-30 minutes or until there's a little char on the tomatoes and capsicum.
7. Serve it up hot with some yoghurt and smash it down!
