Fermented Chilli & Garlic
INGREDIENTS
12-14 Long Red Chillies
1 Large Green Capsicum
2 Tablespoons Salt
5 Cloves Garlic
Extra Virgin Olive Oil
METHOD
1. Simply slice around 12-14 long red chillies and 1 large green capsicum. Sprinkle around 2 tablespoons of salt on it and leave in a colander to lose a bit of liquid. Leave for up to 30 mins then drain.
2. Separately, slice around 5 cloves of garlic and set aside.
3. In a large, sterilised jar, add in the drained chilli and capsicum mixed with the garlic and top with good quality extra virgin olive oil.
4. Leave at room temp on the bench for a week and then refrigerate.
