Roasted Tomato and Capsicum Soup
INGREDIENTS
2 red capsicums
6 large ripe tomatoes
3 cloves of garlic
1 white onion
Olive oil
1 tsp dried oregano
Salt & pepper
1 packet of Caravan Foods Croutons
METHOD
Preheat your oven to 200degrees.
Roughly chop up capsicum, tomatoes, onion and garlic and place in a baking dish
A generous sprinkle of salt, dried herbs and olive oil on top.
Bake in the oven for 30 minutes or until you see a lovely char on the edges of the tomatoes and capsicum.
Once cooled, blend the roasted veggies thoroughly in a blender until smooth.
Top with a drizzle olive oil and a generous helping of our Caravan Foods Croutons and enjoy!
