Roasted Tomato and Capsicum Soup

INGREDIENTS

  • 2 red capsicums 

  • 6 large ripe tomatoes 

  • 3 cloves of garlic 

  • 1 white onion 

  • Olive oil 

  • 1 tsp dried oregano 

  • Salt & pepper 

  • 1 packet of Caravan Foods Croutons

METHOD

  1. Preheat your oven to 200degrees.

  2. Roughly chop up capsicum, tomatoes, onion and garlic and place in a baking dish

  3. A generous sprinkle of salt, dried herbs and olive oil on top.

  4. Bake in the oven for 30 minutes or until you see a lovely char on the edges of the tomatoes and capsicum.

  5. Once cooled, blend the roasted veggies thoroughly in a blender until smooth.

  6. Top with a drizzle olive oil and a generous helping of our Caravan Foods Croutons and enjoy!
