Sweet Potato & Harissa Gnocchi
INGREDIENTS:
For the gnocchi:
1 medium sweet potato
2 medium white washed potatoes
2-3 cups of plain flour
1 egg
1 tsp salt
1 tbsp harissa paste
For the sauce:
2 shallots finely sliced (or an onion)
1 punnet of halved cherry tomatoes
1 capsicum sliced thinly
For the burnt butter:
2 tbsp unsalted butter
2 tsp sweet paprika
A handful of sage leaves
1-2 tbsp of raisins
Garnish with some goat’s cheese if you want to go all out!
METHOD:
Make the gnocchi by using a ricer or mashing the potatoes and then combine all ingredients in a bowl and gently kneading until it all comes together. Reserve some flour and only add it if the mixture sticks to your hands.
Once the mixture is combined, wrap in some cling wrap and rest in the fridge for 30 minutes.
While the gnocchi is resting, make your loaded yoghurt. See the recipe here.
Now prepare the onions, tomatoes and capsicum. Fry them off in some oil until they have plenty of colour on them. Take off the heat until the gnocchi is ready to be added in.
Divide the gnocchi dough into 4 parts. With a bit of flour on a clean surface, roll it out until it’s long and thin (I like to squeeze it between my hands as I find it easier that way but you do you). Grab a knife and cut the long roll into gnocchi-sized chunks, throw a little more flour on them to prevent sticking and set aside.
Add the gnocchi to salted boiling water and boil until all of those glorious chunks float to the top.
Strain the gnocchi and throw into a hot frying pan with the onions, capsicum and tomatoes. Fry off until you get some browning on each side of the pasta - doesn’t have to be perfect!
Separately add some butter to a little frying pan and pop on a medium heat. Add paprika and optional fresh herbs (I used sage because I like it). Gently heat until the butter browns then take off the heat.
Now let’s plate this bad boy up!
Add a VERY generous amount of that loaded yoghurt to a bowl, top with your glorious gnocchi mix and then drizzle some of that sexy burnt butter on top.
Then prepare to pick yourself off the floor after you are knocked out by a taste explosion!
