Mediterranean Chicken Tray Bake
Omg this was such a hit! Yum, easy and pretty cost effective!
INGREDIENTS
1kg Meatsmith Cacciatore Chicken Thighs
3 diced wash potatoes
1 diced sweet potato
1 chorizo sliced thinly
Around 100 grams of Brussels sprouts halved
Handful of diced pumpkin
1 punnet of cherry tomatoes
200grams chopped halloumi
METHOD
Throw your potato and sweet potato in a baking tray with some tasty spices of your choosing and olive oil. Bake on 180 for around 20 minutes to give them a head start.
Then add all your other veggies (hold the tomatoes and halloumi though). Chuck your chicken on top with a drizzle of olive oil and bake on 180 for around 30 minutes or until everything is cooked through and your chicken has some sexy colour on it.
Then crank your oven to MAX and chuck the tomatoes and halloumi on top. We want it to caramelise and brown up.
To stretch this dish even further, add some cooked rice when serving or popping in containers for meal prep.
Serve this bad boy with my loaded yoghurt recipe and you'll be in heaven.
Note: this was a huge batch so feel free to halve it if you're feeding fewer hungry mouths
