Smashed Cucumber Salad

INGREDIENTS:

  • 1 continental cucumber 

  • 1 tsp salt 

  • 1 tsp sesame oil 

  • Β½ tsp grated garlic 

  • 1 tsp crunchy chilli oil 

  • 1 tsp ponzu dressing (or rice wine vinegar)

  • 1 tsp sugar 

  • 1tsp sesame seeds


METHOD:

Gently slice the cucumber lengthways down the middle and smash it with your knife. Set the cucumber in a colander with a generous sprinkle of salt to help some of the juice work its way out - this helps ensure nice, crunchy cucumber. 

Once the cucumber has rested, remove excess liquid and combine all other ingredients in a bowl. 

Set aside to marinate anywhere from 30 minutes to overnight. 

Serve with my sticky chicken for the ultimate pairing!
